Doldinger was born in Berlin in 1936 and moved with his family to Vienna at age four, then to Schrobenhausen, Bavaria, where he first heard jazz at age nine from American soldiers. He studied piano and clarinet at the Düsseldorf Conservatory, and after his Abitur in 1957 studied musicology and Tonmeister there. He played soprano saxophone in Düsseldorf bars and clarinet with the Dixieland band The Feetwarmers, recording with them in 1955. He founded Oscar's Trio, which won the Coup Sidney Bechet at the Brussels jazz festival and earned an invitation to play in the United States in 1960.

In 1962, Doldinger formed the Klaus Doldinger Quartet with bassist Helmut Kandlberger, drummer Klaus Weiss, and organist Ingfried Hoffmann. Their first LP, Jazz Made In Germany (1963), won international recognition. The quartet released several albums incorporating Latin jazz, hard bop, and free jazz until disbanding in 1970. Doldinger founded the fusion group Passport in 1971, which released over 30 albums and was sometimes called the European version of Weather Report. He composed film scores for Wolfgang Petersen's Das Boot (1981) and The NeverEnding Story (1984), and wrote theme music for Tatort (1970) and other television series.
