Espelette pepper

The Espelette pepper is a variety of Capsicum annuum cultivated in the French commune of Espelette and neighboring Basque communes. It was classified as an AOC product in 2000 and confirmed as a PDO product in 2002. Its flavor is sweet, fruity, and berry-like with mild heat, reaching a maximum of 4,000 Scoville units. It is a cornerstone of Basque cuisine, used in piperade and for meat preservation.
