Berserk Mode
The out-of-control state in which an Evangelion fights on beyond human command.
Berserk (bōsō, 'out of control') is the state in which an Evangelion has gone beyond humanity's ability to control it. In it the Eva fights in a savage, almost animal frenzy with greatly increased strength, and units whose jaws are bolted shut may force them open to let out a howl.

Background
How berserk mode works is beyond human science. Ritsuko Akagi could not believe it when Unit-01 first moved without power or pilot input in the battle with Sachiel, nor when it later went berserk against Leliel and Zeruel with its batteries drained; no power source was ever found. It seems that the Eva's resident soul, in Unit-01's case Yui Ikari, acts on its own, which can be read as a mother protecting her child. NERV is well aware of the danger of an uncontrolled Eva and keeps the units bound and restrained at all times.
