Chhattisgarhi cuisine
Rice-based cuisine with tribal traditions and seasonal cooling dishes.
Last updated
Chhattisgarhi cuisine is centered on rice, which is a staple grain in the state often called the rice bowl of India. Traditional and tribal foods rely on rice and rice flour, curd, and a variety of green leafy vegetables such as lal bhaji, cholai bhaji, and kochai patta.
A common summer meal is Bore Baasi, cooked rice dipped in water, dahi, or buttermilk, eaten with pickle and raw onion to stay hydrated. Dishes like Iddhar are made by layering ground urad dal and kochai patta, steaming the roll, and preparing it in a curd-like curry. Tribal and village populations consume a brew from the small, creamy white flowers of the Mahuwa tree.
