The brewery was established in 1857 by Frederick Sherwood, who had migrated to the Swan River Colony in 1843 with his wife and three children. After his wife's death, Sherwood—formerly an architect, surveyor and builder—founded the brewery to support his six children, using the Swan River's fresh water and convict labour. Following Sherwood's death in 1874, the brewery was leased to John Maxwell Ferguson and William Mumme, who valued its pure water supply. In 1879 the brewery moved to a site at the foot of Mount Eliza, near the Stanley Brewery and the Lion Brewery. The Swan Brewery Company Ltd was incorporated in Melbourne in 1887. Over subsequent decades, it absorbed the Lion Brewery (1888), Fremantle's Castlemaine Brewery (1927), the Emu Brewery (1928), and the Kalgoorlie Brewing Company (1945). Production ceased at the Mounts Bay site in 1966, moving to the Emu Brewery site, and then to a large automated factory at Canning Vale in 1978. In 1981 Alan Bond's Bond Corporation purchased the brewery for A$164M, and by 1983 Bond Corporation controlled roughly half of Australia's beer market. In 1990 Lion Nathan acquired a 50% stake in Bond Brewing, purchasing the remainder two years later. In 2009 Lion Nathan was taken over by Kirin Brewery Company. In October 2012 Lion Nathan resolved to close the Canning Vale operations by March 2013 and move production interstate.
