His time with the Wildcats lasted one and a half seasons; in December 2014 he was traded to the Shawinigan Cataractes for a third-round pick, having accumulated 21 points through 86 games. With the Cataractes, he scored a goal in the QMJHL's first Winter Classic, a 4–2 win over the Victoriaville Tigres. Before the 2015–16 season, Olivier was named an assistant captain alongside Alex Pawelczyk, Zachary Taylor, Alexis D'Aoust, and Giovanni Fiore, and helped lead the team to the President's Cup Finals, where they were eliminated by the Rouyn-Noranda Huskies. On the opening night of the 2017–18 QMJHL training camps, Olivier was traded to the Sherbrooke Phoenix for two picks in the 2020 draft. By February 2018 he had 42 points with the Phoenix while serving as an alternate captain. On February 19, 2018, he signed his first professional contract with the Milwaukee Admirals of the American Hockey League. He remained with the Phoenix for the rest of the season, recording six points through 10 playoff games as they reached the second round, and received the team's MVP and Fan Favourite Award. After his major junior career, Olivier attended the Nashville Predators Development Camp and Prospects Showcase. In his first professional season he had four goals and 12 points through 54 games and led the AHL with nine fights, earning a two-year entry-level contract from the Predators. He started the 2019–20 season with the Admirals, recording seven points in 17 games, before being recalled to the Predators on November 18, 2019. He made his NHL debut the next day on the fourth line in a 2–1 loss to the Winnipeg Jets. On July 1, 2022, Olivier was traded to the Columbus Blue Jackets in exchange for a fourth-round pick in 2022.
