Tokarski grew up in Watson, Saskatchewan, after being born in Humboldt. He played midget hockey for the Prince Albert Mintos, leading them to the Telus Cup in 2006 with three shutouts and a 1.98 goals against average. He joined the Spokane Chiefs of the Western Hockey League in December of that year. In his second season with the Chiefs, he became the starting goaltender and played every playoff game, allowing only 31 goals in 21 games to win the Ed Chynoweth Cup. At the 2008 Memorial Cup, Tokarski made 53 saves in the final to defeat the Kitchener Rangers, earning the Hap Emms Memorial Trophy and the Stafford Smythe Memorial Trophy.

Tokarski was drafted by the Tampa Bay Lightning in the fifth round of the 2008 NHL entry draft. He made his NHL debut on January 19, 2010, replacing Antero Niittymäki in a game against the New York Rangers. His first NHL start came on March 8, 2012, against the Washington Capitals, a 3–2 overtime loss. He won the Calder Cup with the Norfolk Admirals in 2012. In February 2013, he was traded to the Montreal Canadiens for Cédrick Desjardins. He recorded his first NHL shutout on March 16, 2014, stopping all 29 shots in a 2–0 win over the Buffalo Sabres. During the 2014 playoffs, he started in place of injured Carey Price and played six games in the Eastern Conference Finals against the New York Rangers, earning praise for his performance despite the Canadiens losing the series 4–2.

After being placed on waivers by Montreal in October 2015, Tokarski was traded to the Anaheim Ducks in January 2016. He later played for the Philadelphia Flyers organization, then signed with the New York Rangers in August 2018. He was assigned to the Hartford Wolf Pack and later reassigned to the Charlotte Checkers, where he went undefeated in seven regular-season games and five playoff contests to win his second Calder Cup in 2019. He subsequently signed with the Wilkes-Barre/Scranton Penguins, then the Buffalo Sabres, and later rejoined the Pittsburgh Penguins. He returned to Buffalo on a one-year contract for the 2023–24 season, playing for the Rochester Americans. After a tryout with the Ottawa Senators, he signed a PTO with the Chicago Wolves in November 2024, then signed a one-year, two-way contract with the Carolina Hurricanes on December 2, 2024. He made his Hurricanes debut on December 15, 2024, against the Columbus Blue Jackets, earning a win with 27 saves on 28 shots. He later played for Löwen Frankfurt of the DEL in the 2025–26 season.
