Ehlers began his career in Switzerland, playing youth and junior hockey within the EHC Biel organization. He made his National League A debut at age 16, the youngest player in the league at the time, during the 2012–13 season. Due to the 2012–13 NHL lockout, his linemates with Biel included Patrick Kane and Tyler Seguin, who influenced his decision to move to Canada. He was drafted sixth overall by the Halifax Mooseheads in the 2013 CHL Import Draft and spoke with fellow Danes Oliver Bjorkstrand and Mikkel Bødker before joining. In his rookie QMJHL season, he recorded 104 points in 63 games, winning the RDS Cup as Rookie of the Year and the Michael Bossy Trophy as the QMJHL's Top Prospect. He was selected ninth overall by the Winnipeg Jets in the 2014 NHL entry draft. After signing a three-year entry-level contract, he returned to Halifax for the 2014–15 season, where he was named an alternate captain and recorded 101 points in 51 games, winning the Paul Dumont Trophy as the QMJHL's Personality of the Year. He made his NHL debut on 8 October 2015, scoring his first career goal on 13 October against the New York Rangers. He recorded his first NHL hat-trick on 26 January 2016 against the Arizona Coyotes. Ehlers played for the Jets from 2015 to 2025 before joining the Hurricanes and winning the Stanley Cup in 2026.
