Stillman grew up in Peterborough, Ontario, playing hockey for the Minor Petes and later for the Peterborough Roadrunners Jr.B. He was selected in the second round of the 1990 OHL Priority Selection by the Windsor Spitfires. After being drafted sixth overall by the Calgary Flames in 1992, he played one more season in the OHL before joining the Flames' AHL affiliate in Saint John, where he was an AHL All Star in 1995. He made his NHL debut on February 6, 1995, recording his first point on a third-period assist. Stillman became a regular with the Flames in 1995–96, reaching a career-high 27 goals in 1997–98 and again the following season. He was traded to the St. Louis Blues in 2000–01 and helped the Blues reach the Western Conference Final, scoring the overtime game-winning goal in game three against the Dallas Stars. After three seasons with St. Louis, he was traded to the Tampa Bay Lightning in the 2004 off-season. With the Lightning, he posted a career-high 80 points in 2003–04 and won the Stanley Cup that season, though he was quiet in the playoffs with two goals and five assists in 21 games.

Stillman signed a three-year contract with the Carolina Hurricanes on August 2, 2005, following the end of the 2004–05 NHL lockout. With the Hurricanes, he won his second consecutive Stanley Cup in 2006, becoming the first player since Claude Lemieux and the eleventh overall to win back-to-back Cups with different teams. He waived his no-trade clause on February 11, 2008, to be traded to the Ottawa Senators along with Mike Commodore for Patrick Eaves and Joe Corvo. After signing a three-year deal with the Florida Panthers on July 1, 2008, he played his 1,000th NHL game on February 17, 2011. The Panthers traded him back to the Hurricanes on February 24, 2011, in exchange for Ryan Carter and a fifth-round pick. Stillman announced his retirement on September 8, 2011, after 16 NHL seasons, and initially joined the Florida Panthers staff as a development coach. He is currently the Head Coach of the Guelph Storm.
