Irbe began his professional career with Dinamo Riga of the Soviet Hockey League from 1987 to 1991. He became the team's number one goaltender after an injury to starter Vitali Samoilov, helping Dinamo Riga reach the Soviet league finals. Irbe also played for the Soviet Union national team, winning World Championships in 1989 and 1990, and was named best goalkeeper of the 1990 tournament. He refused to play for the Soviet Union in 1991 after Latvia proclaimed independence and Soviet forces attempted to suppress it; Irbe joined protesters in Riga to protect buildings and landmarks.

In North America, Irbe first played for the Kansas City Blades of the IHL, leading the team to a Turner Cup championship in 1991–92. He debuted in the NHL with the San Jose Sharks that same season and helped the Sharks make their first playoff appearance in 1993–94, upsetting the top-seeded Detroit Red Wings. Irbe set an NHL record that season by playing 4,412 minutes in goal. Known as 'Archie' and nicknamed 'The Wall', he became a cult figure in San Jose. After a hand injury from his pet dog and a poor 1995–96 season, he was released by the Sharks.

Irbe served as a backup for Dallas and Vancouver before becoming the starter for the Carolina Hurricanes in 1998–99. He was selected for the World NHL All-Star team that season and became the first goaltender to record an assist in an NHL All-Star Game. After a disappointing 2002–03 season, the Hurricanes assigned him to the Johnstown Chiefs of the ECHL in October 2003. He went 8–2–1 in 11 games and was named starter for the Eastern Conference All-Star Game but could not participate due to a wrist injury. He was recalled to Carolina in March 2004 and played his final NHL game on 4 April 2004, a 6–6 tie against the Florida Panthers—the last tie in NHL history before the league introduced shootouts.
