Roy was drafted by the Carolina Hurricanes, 96th overall, in the 2015 NHL entry draft. He won the Stanley Cup with the Vegas Golden Knights in 2023. Prior to turning professional, Roy had a prolific major junior hockey career with the Chicoutimi Saguenéens. Although he was drafted first overall by the Cape Breton Screaming Eagles at the 2013 Quebec Major Junior Hockey League (QMJHL) entry draft, he refused to play for the league unless his rights were traded to a Quebec-based one. Internationally, Roy has competed for Canada at the 2014 Ivan Hlinka Memorial Tournament, 2015 IIHF World U18 Championships, and 2017 World Junior Ice Hockey Championships.

Roy was born on February 5, 1997, in Amos, Quebec, Canada. He played minor ice hockey for the Rouyn-Noranda Huskies Bantam AA and midget AAA hockey with the Amos Forestiers. He was selected first overall in the 2013 QMJHL draft by Cape Breton but refused to play until traded to Chicoutimi. He played junior hockey for the Saguenéens, serving as captain and earning QMJHL First All-Star Team honors. Professionally, he debuted with the Carolina Hurricanes in 2018, was traded to the Vegas Golden Knights in 2019, then to the Toronto Maple Leafs in 2025, and later to the Colorado Avalanche in 2026.
