Garlic (Allium sativum) is a species of bulbous flowering plant in the genus Allium, native to Central Asia, northeastern Iran, and the foothills of the Himalayas. It has naturalized in many other regions, including Mediterranean Europe and China. The plant grows from a bulb, producing a tall, erect flowering stem and flat, linear leaves. Its flowers, which appear from July to September in the Northern Hemisphere, are pink to purple and hermaphroditic, pollinated by butterflies, moths, and other insects. The bulb typically contains ten to twenty cloves, with those near the center being symmetrical and outer ones often asymmetrical; each clove is wrapped in inner and outer sheathing leaves. Garlic can be cultivated as far north as Alaska if planted at the correct time and depth.

China was the largest producer in 2024, accounting for seventy-three percent of the world’s supply. The word garlic comes from Old English *garlēac*, meaning spear-shaped leek.
