Talbot grew up in Caledonia, Ontario, and played minor hockey in the region. He went undrafted in the Ontario Hockey League's Priority Selection draft and joined the Hamilton Red Wings of the Ontario Junior Hockey League (OJHL) for the 2004–05 season. After being named league MVP and an all-star in his final OJHL season, he committed to the University of Alabama in Huntsville (UAH), the only team that approached him. At UAH, he led the Chargers to a College Hockey America conference title and an NCAA Tournament berth in 2009–10, earning All-CHA Second Team and CHA Tournament MVP honors.

Talbot signed with the New York Rangers as an undrafted free agent in 2010 and spent several seasons in the AHL with the Connecticut Whale and Hartford Wolf Pack. He made his NHL debut on October 24, 2013, in a 2–1 loss to the Philadelphia Flyers, and earned his first win against the Detroit Red Wings two days later. He served as Henrik Lundqvist's backup and helped the Rangers reach the 2014 Stanley Cup Finals. In 2015, he was traded to the Edmonton Oilers, where he became the starting goaltender and set a franchise record with 42 wins in the 2016–17 season, leading the Oilers to the playoffs for the first time in ten years.
