Meyer was born in Powell, Ohio, and began playing hockey at age three after the Columbus Blue Jackets joined the NHL. He played for the Ohio AAA Blue Jackets from age 14, forming a forward line with future NHL players Jack Roslovic and Kole Sherwood. In the 2014–15 season, he scored 21 goals and 30 assists for 51 points in 32 games. He later played two games for the Tri-City Storm of the USHL, then scored 32 goals and 51 points with the Storm in 2015–16, adding 5 goals and 11 points in 11 postseason games to help win the Clark Cup. In 2016, he and Wade Allison were selected for the USHL/NHL Top Prospects Game.

Meyer committed to Miami University for the 2016–17 season, scoring his first collegiate goal on October 8, 2016. He recorded 26 points (10 goals, 16 assists) as a freshman and was named to the NCHC Academic All-Conference Team. The Blue Jackets drafted him in June 2017. During his sophomore season, Meyer suffered from a tapeworm infection that caused loss of appetite, fatigue, nausea, and malnourishment, leading to a poor season (6 goals, 10 points, −22 plus-minus). He transferred to Ohio State University for 2018–19, where he had 22 points in 34 games as the Buckeyes won their first regular-season Big Ten championship. In his senior season (2019–20), he led the team with 17 goals and 31 points, including a four-goal, five-point game in the Big Ten tournament. His college career ended early due to the COVID-19 pandemic.

Meyer signed with the Cleveland Monsters (AHL) in October 2020 and made his professional debut in February 2021, scoring two goals. He signed an entry-level contract with the Blue Jackets and made his NHL debut on April 4, 2022, recording his first NHL goal and assist the next night. After the 2023–24 season, he signed with the Anaheim Ducks but was assigned to their AHL affiliate, the San Diego Gulls, where he posted 9 goals and 21 points in 29 games. In July 2025, he signed a two-year, two-way contract with the Buffalo Sabres.
