Boukouvalas discovered archery after watching the 2004 Olympic Games on television, but did not begin his archery career until 2016 due to prior commitments with competitive swimming. He trained with coach Alex King at the Sydney Olympic Park Archery Centre. He is of Greek origin and works as a Station Master at St Peters railway station.

His competitive career began in 2018 at the Asia Cup Stage 3, where he placed 17th. He won gold at the 2021 Australian Open. In 2022 he competed in stages one and three of the Archery World Cup, placing 65th in both. The following year he participated in the Archery World Championships (33rd) and stages one, two, and four of the Archery World Cup, finishing 65th, 17th, and 33rd respectively. At the 2023 Pacific Games he earned silver in both the Recurve Single 720 Round 70m Male and Recurve Match Play Male events.

In 2024 Boukouvalas competed in Archery World Cup stages one and two, placing 33rd in both. He was selected for the Australian team at the 2024 Paris Olympics, where he placed 60th in the Men's Individual ranking round and was eliminated in the 1/32 round by Wooseok Lee, losing 6-0.
