Sand dollars, also known as sea cookies, snapper biscuits, pansy shells, sand cakes, or cake urchins, are species of flat, burrowing sea urchins belonging to the order Clypeasteroida. They are found in temperate and tropical zones along all continents, living in waters below the mean low tide line on or just beneath sandy and muddy areas. Their name derives from the appearance of their bleached white tests (skeletons) after being washed ashore, which to beachcombers of the past suggested a large silver coin such as the old Spanish dollar.

These animals are small, typically averaging 80 to 100 mm in size. Their rigid skeleton, called a test, is composed of calcium carbonate plates arranged in a fivefold symmetric pattern. In living individuals, this test is covered by a velvet-textured skin of spines, which are themselves covered in tiny hairs called cilia. Coordinated movements of these spines allow the sand dollar to move across the seabed. The spines of live sand dollars can appear in various colors, including green, blue, violet, or purple, depending on the species. Some species possess slits in their test called lunules, which help anchor the animal in the sand and prevent it from being swept away by waves.

The bodies of adult sand dollars display radial symmetry, with a distinctive petal-like pattern consisting of five paired rows of pores. These pores are perforations in the endoskeleton through which podia project for gas exchange. The mouth is located on the underside at the center of this pattern. Unlike most sea urchins, sand dollars also exhibit secondary front-to-back bilateral symmetry, with the anus positioned at the back rather than the top. This adaptation reflects their evolutionary shift from living on top of the seabed (epibenthos) to burrowing beneath it (endobenthos). There are no morphological differences between males and females.

Sand dollars diverged from other irregular echinoids during the early Jurassic, with the first true sand dollar genus, *Togocyamus*, appearing in the Paleocene. More modern-looking groups emerged during the Eocene. Their diet typically consists of algae and organic matter found on the ocean floor, though some species will tip on their side to catch floating organic matter. They are often found gathered together on the ocean floor, preferring soft bottom areas.
