Rempal played three seasons with the Nanaimo Clippers in the British Columbia Hockey League (BCHL), where he was named to the BCHL 1st Team All-Stars after the 2015–16 season. He then played two seasons at Clarkson University, majoring in business, earning NCAA (ECAC) All-Rookie Team honors in his freshman year and NCAA (East) Second All-American Team, NCAA (ECAC) All-Tournament Team, and NCAA (ECAC) First All-Star Team in his sophomore year. He signed a two-year entry-level contract with the Los Angeles Kings as an unrestricted free agent on March 30, 2018, making his NHL debut on October 18, 2018, in a 7–2 loss to the New York Islanders. After his entry-level contract expired, he was not tendered a qualifying offer and became a free agent, subsequently signing one-year contracts with the Carolina Hurricanes and Vancouver Canucks before joining the Vegas Golden Knights on a two-year, two-way contract on July 13, 2022.

Sheldon Rempal's significance lies in his journeyman career across multiple NHL organizations and his eventual achievement of scoring his first NHL goal with the Vegas Golden Knights. After spending most of the 2022–23 season with Vegas' AHL affiliate, the Henderson Silver Knights, Rempal was recalled to Vegas on January 18, 2024, following a four-goal game for Henderson. He recorded his first career NHL goal on January 23, 2024, on the power play against Ilya Sorokin of the New York Islanders, and added his second career goal three days later against the New York Rangers, deflecting a shot from Paul Cotter past Igor Shesterkin. His legacy includes being named AHL Rookie of the Month for November 2018 and selected to the Pacific Division All-Stars for the 2019 AHL All-Star Classic while with the Kings' affiliate. After his Vegas contract concluded, he moved to the KHL with Salavat Yulaev Ufa, briefly returned to North America with the Washington Capitals, and ultimately returned to Salavat Yulaev Ufa.
