Witkowski played college hockey at Western Michigan University, where he served as captain in his senior year and was named to the All-CCHA Second Team. He was drafted by the Lightning in 2008 and signed an entry-level contract in 2013. After spending time with the Syracuse Crunch, he made his NHL debut on January 20, 2015, in a 4–1 victory over the Vancouver Canucks. He played 16 games with the Lightning that season, providing physical play during a stretch of injuries on defense. Witkowski recorded his first career NHL assist on December 8, 2016, and played a career-high 34 NHL games for the Lightning during the 2016–17 season. He was named captain of the Syracuse Crunch in 2016, becoming the 15th full-time captain in team history. After signing with the Detroit Red Wings in 2017, he scored his first NHL goal on February 17, 2018. He returned to the Lightning in 2019 and was again named Crunch captain. Witkowski later played for the St. Louis Blues and then moved to Europe, signing with Tappara of the Liiga in 2023.
