Protein toxicity occurs when the body accumulates waste products from protein metabolism, including urea, uric acid, ammonia, and creatinine. These compounds normally get filtered out by the kidneys, but when that process fails—due to conditions like chronic kidney disease, acute kidney injury, urea cycle disorders, genetic mutations, or simply eating too much protein—they build up and become harmful. Early signs include unexplained vomiting and a loss of appetite. If left untreated, the condition can worsen into seizures, encephalopathy, more kidney damage, and can be fatal.
A specific form of this condition, known as "protein poisoning" or "rabbit starvation," was documented by Arctic explorer Vilhjalmur Stefansson. It happens when someone survives for a long time on very lean meat, such as rabbit, without enough fat or carbohydrates. This is a type of acute malnutrition caused by an extremely high proportion of protein in the diet, not by a lack of calories—the person may be eating enough food overall, but the imbalance triggers toxicity.
