Botelo

Portuguese smoked sausage made from seasoned pig offcuts.

Botelo, also known as chouriço de ossos in Portuguese, is a meat-stuffed pork intestine dish and a culinary specialty of the Trás-os-Montes region in Portugal. It is made from leftover pig parts, including ribs, tail, and bones with some meat, chopped, seasoned with salt, paprika, garlic, and marjoram, stuffed into the pig's cecum, smoked, and dried. The term botelo derives from the Latin word botellus, meaning intestine.
