Italian tomato pie

A thick-crust tomato pie, often served at room temperature.

Italian tomato pie is an Italian-American baked good with a thick, porous, focaccia-like dough topped with tomato sauce, sometimes sprinkled with Romano cheese or oregano. It is typically cooled and served at room temperature or reheated, and is descended from the Italian sfincione. A 1903 article described a version made with dough, tomatoes, and powdered red pepper.
