Cutting board

A cutting board, also called a chopping board, is a sturdy, flat surface designed for cutting materials. In kitchens, it is typically used during food preparation with knives, but other types exist for cutting raw materials like leather, rubber, or plastic. Kitchen cutting boards are usually made from a slab of hardwood or polyethylene and are available in many widths and sizes.

The earliest cutting boards date back to around 3000 BC and have been widely used ever since. They appeared in ancient Egyptian, Greek, and Roman kitchens. Early versions were flat stones or large wooden slabs, likely developed out of necessity. Wood soon became the preferred material because it was durable and easy to find. An ideal cutting board material is soft, easy to clean, and non-abrasive, yet not so fragile that it falls apart. Hard cutting boards can still be used for tasks that don't require a sharp knife, such as cutting cheese or making sandwiches.

Wood has several advantages over plastic. It is somewhat self-healing—shallow cuts in the wood close up on their own—and it has natural antiseptic properties. Hardwoods with tight grain and small pores are best for cutting boards, as they resist scoring and reduce absorption of liquids and dirt. Red oak, though a hardwood, has large pores that trap dirt even after washing, making it a poor choice. Ideal woods include birch, maple, cherry, and walnut. Teak, with its tight grain and natural coloration, is attractive for both looks and durability. It is a tropical wood containing tectoquinone, a natural oily resin that repels moisture, fungi, warping, rot, and microbes. Wooden boards can also be refinished by sanding and reapplying oil and wax. The best coatings are non-toxic natural waxes and oils, such as linseed oil and beeswax. Wood boards need care with edible mineral oil to prevent warping and should not be left in puddles of liquid; ideally, they are suspended freely while drying. Some tropical hardwoods contain toxins or allergens, so care is needed when selecting wood. Tamarind wood, commonly used in southern India, is known for its durability and density, and is often the go-to choice for commercial butchers. With a Janka hardness over 2000, it is one of the toughest woods. End grain cutting boards made from tamarind are durable and knife-friendly, and more affordable than teak. It is best to choose a cutting board made from a single piece of wood rather than multiple glued pieces. While glued boards are more common, it is important to ensure the glue is free of formaldehyde and melamine.

Bamboo cutting boards are an alternative to plastic or glass, partly because bamboo is often thought to be naturally antimicrobial (though studies show otherwise). During harvesting, bamboo is carefully selected for maturation, markings, and size. The stalk is cut into specific sizes and pressed into smaller plank-like pieces. Once pliable, multiple pieces are laminated to form a board. Bamboo has not been historically used in Asian nations because it is extremely hard. It is less porous and harder than hardwood cutting boards, which makes it resistant to scarring from knives. It also absorbs little moisture, making it more resistant to bacteria than other woods.

Plastic boards are typically made from polyethylene (PE) or high-density polyethylene (HDPE). There are two main types: injection-molded and extruded HDPE. Researchers are now developing cutting boards from HDPE plastic waste, using calcium carbonate as filler and glass fiber for reinforcement, as a more environmentally friendly option. Some plastic boards carry NSF certification, meaning the plastic has passed requirements for food contact. Unlike wood, plastic has no natural antiseptic properties, but it can be rinsed with harsh cleaning chemicals like bleach and disinfectants without damage or chemical retention that could later contaminate food. Most HDPE boards are designed not to dull knife edges. If a score line is present, the knife is safe. Serrated knives should not be used on plastic boards. The sharper the knife, the longer the board lasts. Semi-disposable, thin, flexible cutting boards also make it easy to transfer contents to a cooking or storage vessel.

Silicone, like rubber, is soft on blades and is self-healing and antibacterial like wood. It is also heat-resistant and lacks the rubbery smell of rubber boards.

Glass may seem easy to keep clean, but its high hardness can damage knives. Cutting on glass tends to dent, roll, or even chip the blade.
