Washington pie
A layered American dessert, precursor to Boston cream pie.
Washington pie is a sandwich cake from American cuisine, possibly a forerunner to Boston cream pie. The oldest known recipes come from the 1850s. The original version had two yellow sponge cake layers with jam, often raspberry, and powdered sugar on top. Later versions added chocolate and cream. Another type, more like a true pie, used stale cake soaked with cream, plus raisins and spices, baked in a square pastry crust.
