German Sausages Codexery

Teewurst

A spreadable smoked sausage originally from Pomerania, served at teatime.

Teewurst is a German spreadable sausage made from two parts raw pork (sometimes with beef) and one part bacon, minced, seasoned, packed in casings, smoked over beech wood, and matured for seven to ten days. Its fat content of 30 to 40 percent makes it easy to spread. The name, meaning tea sausage, comes from serving it in sandwiches at teatime. It was invented in the mid-19th century in Pomerania, probably in Rügenwalde (now Darłowo, Poland).
