Ontbijtkoek
A Dutch spiced rye cake served at breakfast or as a snack.
Ontbijtkoek, also known as peperkoek or kruidkoek, is a Dutch and Flemish spiced cake. Its most important ingredients are rye and dark brown basterdsuiker, which color the cake light brown. It is often spiced with cloves, cinnamon, ginger, succade and nutmeg. The most famous local variety is oudewijvenkoek, flavored with aniseed and mostly eaten in the northern regions. Traditionally served at breakfast with butter, it also appears as a snack and is used in the game koekhappen. Ontbijtkoek is also found in Indonesia.
