Chällerhocker
A Swiss smear-ripened cheese aged in cellars for 8–12 months.
Chällerhocker is a Swiss semi-hard, smear-ripened cheese from Lütisburg in the Canton of St. Gallen. Its name, meaning 'sitting in the cellar' in Swiss German, refers to its traditional aging process. Cheesemaker Walter Rass, known for Appenzeller-style cheeses, developed it in the early 2000s as an artisanal variation on classic Alpine cheeses.
