In Latin America, a customary dish is arroz con pollo, which translates from Spanish as "rice with chicken."[1] Chicken, rice, onions, saffron, and many other grains or vegetables are common ingredients in this dish.[1] Locrio de pollo is an alternate name for this dish in the Dominican Republic, while in Saint Martin it goes by lokri or locreo.[1]
Key facts and history
Food writer Elisabeth Lambert Ortiz traced the dish's origins to Spanish forms of pilaf that already reflected international influences.[2] She noted that chicken was brought from India and rice from Asia for the dish.[2] Saffron, used for the yellow color in Spain instead of annatto, was introduced by Phoenician traders.[2] Tomatoes and peppers, known as sofrito, are native to the Americas.[2]

The dish is widespread across Latin America.[1] Its name directly translates to "rice with chicken" in Spanish.[1]
