Cartouche (cooking)
Parchment disk used to cover food during cooking.
Last updated
A cartouche is a disk of parchment paper used to cover food during cooking. It traps steam while allowing some to escape, reducing cooking time and producing more even results compared to using a lid. Cartouches prevent skin from forming on sauces and are used for braising or poaching.
