Gelsdorf began his playing career at Arminia Bielefeld in the 1972/73 season after joining from the youth team of VfL Bochum. He made 56 appearances with one goal in the Regionalliga West, then 64 appearances with three goals in the 2. Bundesliga North. He moved to Bayer 04 Leverkusen for the 1976/77 season and played 107 games with 17 goals in the 2. Bundesliga North. He helped Leverkusen win the 2. Bundesliga North title in 1978/79 and gain promotion to the Bundesliga. He ended his playing career with six appearances in the 1984/85 season under Erich Ribbeck. As a coach, he was Bayer 04's full-time youth coach from 1 July 1986, then co-trainer under Rinus Michels from 1 July 1988. He succeeded Michels as head coach on 13 April 1989 and was in charge until 31 May 1991. He later coached Borussia Mönchengladbach from 3 October 1991 to 6 November 1992, reaching the 1992 DFB Cup final but losing on penalties. He also coached VfL Bochum, SC Fortuna Köln, KFC Uerdingen 05, VfL Osnabrück, and Rot-Weiss Essen.

The transition from player to coach for Gelsdorf was immediate. On 1 July 1986, he became Bayer 04's full-time youth coach, and by 1 July 1988, he had joined Rinus Michels as a co-trainer. His ascent to head coach came on 13 April 1989 when he succeeded Michels, leading the team until 31 May 1991. Despite significant reinforcements including Jorginho from Flamengo Rio, Martin Kree from VfL Bochum, Sven Demandt from Fortuna Düsseldorf, Andreas Thom from Berliner FC Dynamo, Franco Foda from 1. FC Kaiserslautern, and Ulf Kirsten from Dynamo Dresden, the team failed to reach the top of the Bundesliga table during his tenure. This inability to challenge for the summit led to his replacement on 31 May 1991. His coaching legacy at Leverkusen was capped by reaching the 1992 DFB Cup final with Borussia Mönchengladbach, though they lost 4-3 on penalties.
