Design and ambiance
The dining area seats 124 people with table service and a bar, separated from the dance hall by sliding glass walls. An open kitchen and a patio overlooking the Strip are present. The walls are made of wood planks, and a gift shop sells Western-themed merchandise. The dance hall features live music and DJs playing country and rock, with two bars inside. One bar has eight bar stools with custom-made saddles for seats. The parquet dance floor is approximately 1000 sqft. Line dancing lessons are offered, along with a mechanical bull game. Contests include "Toughest Cowboy" for men and "Bikini Bull Riding" for women. Karaoke is also available. Servers called "Gilley Girls" wear black bikinis, chaps, cowboy boots and cowboy hats; they are hired through casting calls involving dance routines and perform country music-themed dances and tricks on the mechanical bull.
Cuisine and cocktails
The restaurant serves American-style barbecue described as rustic, along with other American dishes such as fried chicken, hamburgers, hot links, chili, brisket, pulled pork, and ribs. A giant pretzel with Crown Royal mustard is offered. Beef brisket is smoked for up to 12 hours using a mesquite pit. Veggie burgers and vegan food are on the menu. The bar serves draft beer and cocktails including the Bikini Bull Rider, Tequila Makes Her Clothes Fall Off, The Devil's Rope, and The Gilley Up. Alcohol-based iced tea and lemonades are available, and beer is served in a 100 USoz drink tower.
