Did You Know?

United States

Fry sauce is a pink condiment that became popular in Utah. Don Carlos Edwards first served it at his restaurant, Don Carlos Barbecue, between 1941 and 1943. He later used the same sauce at the first Arctic Circle in Salt Lake City, which opened in 1950. The pink sauce eventually became known as fry sauce. According to Michael P. Christensen, the sauce "functions as a cultural identifier for Utahns." Arctic Circle still offers fry sauce at its locations in the western United States. In April 2018, Heinz announced Mayochup, a ketchup and mayonnaise blend, after over 500,000 Twitter users voted yes. It reached U.S. stores in September 2018. The sauce is similar to Yum Yum sauce, served in American Japanese steakhouses.

Germany

In Germany, a condiment called Rot Weiß comes in tubes that look like toothpaste, squeezing out a red-and-white striped mix of ketchup and mayonnaise that stays separate. Restaurants sometimes serve fries with an equal blend of the two, known as Pommes Rot-Weiß or informally as Pommes Schranke, referencing the red-and-white barrier gate. Another option, Pommes-Soße or Frittensoße, is a mildly spiced mayonnaise akin to Dutch Fritessaus. Cocktailsoße, similar to American fry sauce, is available but typically paired with döner kebab rather than fries.

United Kingdom

In the UK, the same condiment is called burger sauce. It can be served already mixed or as separate components, much like the Turkish ketchup-mayo. The ketchup is placed in the container first, then the mayonnaise, and the eater stirs them together with their food while dipping. Unlike fry sauce, it usually includes chopped gherkins. Marie Rose sauce, which often contains Worcestershire sauce, lemon juice, and black pepper, is sometimes prepared in the same way.
